Try our favorite spin on a breakfast essential - pancakes! These Almond Flour pancakes are inspired by our drive to make clean, healthy eating- fun and delicious!
- 1 large eggs
- 1/3 cup light coconut milk canned
- 1 tsp vanilla extract
- 1 1/4 cups Nut Up Almond flour
- 1/4 tsp baking soda
- 1 pinch salt
In large bowl, mix together the eggs, light coconut milk, and vanilla until smooth. Add in almond flour, baking soda and a pinch of salt; stir with spoon until well combined.
Lightly coat a large nonstick skillet with butter or oil, and place over medium low heat. Drop about 1/4 cup of batter onto the skillet. It's important to cook until bubbles appear on top and the edges are well cooked. Flip cakes and cook until golden brown on underside, 2 minutes. Let cool & enjoy with almond butter, syrup, or fruit toppings!
