Pesto is so versatile. It’s bold and garlicky. It is perfect as a dip for veggies, a delicious marinade or dressing, smeared on a sandwich, or poured over your favorite pasta (or zucchini noodles!). We used our Garlic Parmesan Chopped almonds in place of the traditional pine nuts. They add a nice richness and an extra kick of garlic, which we love.
Add all ingredients to blender or food processor. Pulse until well blended.
Add more olive oil (one tablespoon at a time) until desired consistency.
Like it spicy? Add some red pepper flakes to kick it up a notch.
