The hardest part about adapting to a low carb diet is giving up crunchy crackers. But here is a great low carb alternative that can be seasoned with any of your favorite herbs and spices. These cheesy crackers are keto friendly and gluten-free!
Preheat oven to 350F
Combine all dry ingredients, including the cheese, in a large bowl until well mixed
Add about 2/3 of the egg mixture and stir together until a dough starts to form. Set remaining egg aside.
Divide dough into 3 equal balls.
Prepare a baking sheet lined with parchment paper or a baking mat. Working with one ball at a time, place on parchment paper or mat and cover with plastic wrap. Flatten dough with rolling pin.
Roll until desired thickness. the thinner the dough, the crispier the cracker. Remove plastic wrap.
Use pizza cutter to cut rolled dough to make cracker-sized squares. This will make it easier to cut when they are out of the oven.
Brush rolled dough with remaining egg.
Bake at 350F until crispy and golden brown, about 20 minutes. Repeat steps 5-8 with remaining dough.
Let crackers cool completely before breaking apart or using pizza cutter to make individual crackers.
