Almond Flour Pretzel Bites
These chewy soft pretzel bites are about the change the game when it comes to warm comfort food. These awesome keto friendly pretzels pack a salty punch with a small cheese undertone. They would be perfectly accompained with an awesome cheese sauce or a spicy mustard. Grab your almond flour and lets get started!
Almond Flour Dough
- ¾ Cup Nut Up almond flour
- 2 Tbsp Cream cheese
- 1 ½ Cups Shredded mozzarella cheese
- 1 Egg
- 8-9 Cups Water
- ½ Cup Baking soda
- 1 Egg
- 1 tsp Water
- Fancy pretzel salt I personally didnt have any on hand so I used table salt and it worked just fine!
Making the Almond Flour Dough
Take a large microwave safe mixing bowl, add in your cream cheese and shredded mozzarella cheese.
Place your bowl into the microwave and heat for 30 seconds. Take the mixing bowl out and stir your mixture. If your mixture of cheese isn't fully melted then place the bowl back into the microwave and heat for another 30 seconds. (Make sure you don't over heat because the cheese can get rubbery and will make adding the almond flour tough.)
Next take a well beaten egg and add it to the melted cheese and stir. Then add in your almond flour and mix well (this can be hand mixed with a spoon).
After combining your ingredients it should start forming into a dough consistency. Using your hands kneed the dough into a little ball and set aside.
Lay down one sheet of parchment paper on the counter and place your ball of dough in the middle. Cut your dough into 4 pieces.
Now your dough should be split into 4 little balls. Take each ball and start rolling them on the counter. (Rolling them out like little snakes. Don't make them to thin.)
Once you have 4 rolls cut into little dough bites (about 2 Inches per pieces)
Making an Egg wash
In a small bowl crack your egg and add your water then mix well. Set aside to use later.
Once your dough is cut set it aside and get out a baking sheet with parchment paper, a large pot and a slotted spoon.
Place a large pot on the stove with about 8-9 Cups of water on medium to high heat and bring to a boil.
Once the water is boiling SLOWLY while stirring add in your 1/2 cup of baking soda.
Adding in the baking soda to fast will cause the mixture to bubble up and boil over. (If for some reason your water does start to boil over, do not panic just lower your heat down to a simmer.)
Gently add in your pretzel bites. Make sure to not over crowd the pot. This should only take about 20 seconds for them. (Doing this boiling technique helps gives the pretzels that beautiful crust and texture)
Once they are done in the pot using your slotted spoon take them out and place them on the baking sheet that is lined with another sheet of parchment paper.
Preheat your oven to 425 degrees.
Once all your pretzel bites have went through the water boil and are now on the baking sheet. Brush each pretzel bite with a little bit of the egg wash you previously made and top with a little bit of salt.
Place your baking sheet in your 425 degree oven and bake for 5-10 minutes or until your pretzel bites are a golden brown
Remove from the oven and grab out your choice of dipping sauce. Then ENJOY!!
