Almond Flour Sugar Cookies
Everyone needs a good sugar cookie recipe in their life. This Almond flour cookie is so fun to make and can be dressed up for every holiday.
- ½ Cup Soft butter
- ¼ Cup Avocado oil
- ¾ Cup Sugar
- 2 Eggs
- 2 tsp Vanilla extract
- ½ tsp Almond extract
- 2¼ Cups Nut Up Almond Flour
- 1/2 Cups Coconut flour
- ½ tsp Baking soda
- ½ tsp Salt
- Powder sugar
- Vanilla extract
Mixing The Cookie Dough (Stand Up Mixer or Hand Mixer both work for this)
In a mixing bowl add in all your wet ingredients. (softened butter, avocado oil, sugar, eggs, vanilla and almond extract) and mix on low. Mix until everything is well combined.
In a separate small bowl add together all your dry ingredients. (almond flour, coconut flour, baking soda and salt) hand mix.
Slowly pour your dry ingredients into your wet ingredient while mixing on low. Make sure everything is well combined. The cookie dough should start to come together. Dough may seem wet but should not be soupy.
Once everything is well mixed, place the cookie dough in clear wrap and cover. Place the dough in the refrigerator and chill for at least 30 minutes. (dough can chill for 30 minutes-overnight)
Pre Heat your oven to 350 degrees.
Once the dough has chilled unwrap the clear wrap, Then lay down a sheet of parchment paper down on your countertop and place the dough in the center. Place another sheet of parchment paper on top of the dough. Then start rolling out your cookie dough. (I don't have a rolling pin so I used a wine bottle)
Once your dough is about ¼ inches thick start cutting out your cookies into any desired shape and place on a parchment paper lined cookie sheet.
Place cookie sheet in the oven at 350 degrees for 13-15 Minutes.
Once they are done cooking, Pull the cookie sheet out and let them cool.
You can decorate these cookies any way you would like.
I put a little bit of powder sugar in a bowl and added a tiny bit of milk at a time while stirring until the mixture got to a frosting consistency, then added a pinch of vanilla extract.
(Fun Fact: If your don't have powdered sugar at home blend up some normal sugar!)
