This Gluten-Free Honey Almond Cake is simple to make and perfect for any occasion! It’s light, moist, tasty, and a healthy alternative to regular cake. Decorate it to fit the occasion or eat plain as a coffee cake. Enjoy!
Gluten-Free Honey Almond Cake
- 2 cups Nut Up Almond Flour firmly packed
- 1 tsp Baking powder
- ½ tsp Baking soda
- ½ tsp Ground cinnamon
- ½ tsp Sea salt
- 4 beaten eggs
- ⅔ cup Honey
- 1 tsp Honey divided
- ¼ cup extra virgin olive oil
Preheat oven to 325°, grease a 9” pan with butter and dust with almond flour.
In a large mixing bowl, whisk together all the dry ingredients – almond flour, baking powder, baking soda, and sea salt.
In another bowl, combine the beaten eggs, honey and olive oil. Mix well and pour over the dry ingredients, stir until the clumps are gone. Pour the batter into the greased pan.
Bake for 40 minutes, until the cake is golden brown and the center is firm to the touch. Place the cake on a wire rack to cool at room temperature.
Take the 1 Tsp of honey, cinnamon, and water and put it into a small sauce pan. Warm over medium heat, stirring constantly to make the glaze. Brush the glaze over the warm cake and let it soak in.
- Sprinkle with powdered sugar and chopped almonds
- Drizzle with melted chocolate
