This recipe creates the perfect old-fashioned chocolate chip cookies - with Almond Butter! These are gluten free cookies packed with protein. Does this mean we can call it a... healthy cookie?
Preheat the oven 350ºF and line a baking sheet with parchment paper or use a silicone baking mat.
In a bowl, beat the butter, sugar, almond butter, egg and vanilla extract until smoothly combined.
Sprinkle in the remaining ingredients, baking soda, salt and almond flour into the wet mixture as you continue to beat. Beat until well combined. Fold in the chocolate chips.
On the baking sheet, portion the dough by 2 tablespoons full and roll into balls. Each ball should be about 2 inches in diameter. Lightly flatten the tops of the cookies with your fingers.
Recommended to bake for 10-12 minutes on 350*. Bake until edges begin to brown. Smaller cookies (and older ovens!) may require less baking time. Check cookies half-way through to ensure you do not over bake :) Enjoy!
